Lentil Soup

16 oz lentils washed
2 quarts water or chicken stock
1 tablespoon oil
1 onion, chopped
2-4 garlic cloves, diced
1 celery stalk, chopped
1 carrot, sliced
1 can diced tomatoes (14.5 oz)
2 teaspoons cayenne
2 teaspoons chili powder
1 teaspoon cumin
salt (to taste)

Put oil in pot and place pot over medium heat. Add garlic and onions and sweat until soft. Add the rest of the ingredients to the pot. Bring to a boil.
Reduce heat and cover.
Cook for about 45 minutes or until beans are tender.
Stir occasionally; Add water if lentils start to show above surface.
