Rice Pilaf
2 tablespoons olive oil
1/2 large onion, diced white or yellow
3 large garlic cloves, minced
1 cup long grain white rice rinsed
2 cups stock vegetable or chicken
1/4 teaspoon coriander
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/2 cup fresh parsley, chopped
Rice rice until water runs clear.
Cook onion, garlic, and possible other aromatics in the oil until soft. Add rice and toast until rice is translucent (about 4 minutes). Add stock and cook until liquid is absorbed (about 15 minutes). Let sit covered for anther three minutes.
