Perfect Baked Potato
4 medium Idaho russet potatoes
olive oil or bacon grease
kosher or rock salt
Preheat oven to 350F.
Wash potatoes and dry. Rub a small amount over oil or grease over each potato evenly. Perforate with fork or sharp knife. Place a thin layer of kosher or rock salt at bottom of 9x12 loaf type pan. Bake in oven at 350* for 1 hour (less for smaller potatoes, longer for more.) Remove from oven and wipe off excess salt.
