Oven Fries Recipe

1 or 2 russet potatoes - pealing optional
garlic powder - optional
onion powder - optional
salt to taste
1-2 tablespoons olive (or other low-smoke-point) oil

Cut potatoes into 1/4 to 1/2 inch strips.

Place potatoes into water. Let sit for at least 1/2 hour to remove excess starch.

Preheat oven to 450F in convection mode.

Remove potato strips from water and dry thoroughly with towels. A salad spinner can also be helpful. The drier the potatoes the crisper the final fries.

Mix potatoes with oil in a bowl to coat thoroughly. Salt and spice to taste. Place a drying rack on a cookie sheet (to catch excess oil). Space the fries on the rack so they aren't touching each other.

Bake at 450 checking for brownness after 40 minutes.
