Hot Tomato Sauce
7 fresh tomatoes, chopped,
or 3 cups undrained canned tomatoes
3 to 4 garlic cloves, chopped
2 cups coarsely chopped onions
2 medium green peppers, chopped
cayenne to taste
2 teaspoons ground cumin
2 teaspoons ground coriander
salt to taste
1 to 2 tablespoons chopped fresh cilantro (optional)
2 tablespoons tomato paste (optional)
Place all the ingredients in a blender or food processor and pure until smooth. Simmer covered on low heat for one to two hours, stirring occasionally. If you'd like a thicker, darker hot sauce, stir in some tomato paste.
Serve hot, at room temperature, or cold. Hot sauce can be stored in a jar for weeks in the refrigerator.
