Spinach Potato Wraps

3 potatoes cooked and diced
2 packages frozen spinach thawed and sqeezed
4 oz asiago cheese grated
1 onion
2 cloves garlic
8 large burrito wrappers

Cook potatoes thoroughly, allow to cool, then dice. Sweat onions and garlic in a bit of olive oil until soft. Add spinach and potatoes and stir to combine flavors. Remove pan from heat and let cool. Divide spinach/potato filling into 8 piles and divide grated cheese into 8 piles. Soften wrappers in microwave for 15 seconds. I usually work with 2 to 3 at a time. Fill each burrito and rewarm to serve immediately or wrap in plastic for refrigerator or freezer storage.
