Spinach Mashed Potato Wraps
4 russet potatoes
3 packages spinach thawed and drained
2 cloves garlic
1 onion
4 to 6 oz cheese (I like bleu)
12 burrito wrappers
Cook the potatoes and mash them with milk, yogurt, sour cream, whatever. Also season with salt and pepper to taste. Slice onion, mince garlic, combine and sweat in a little oil. When translucent and spinach and mix. Remove from heat and combine with potatoes and cheese. Add appropriate amount of filling to each wrapper and fold. I thought 3 scoops from a #30 disher was the right amount. Wrap in wax paper for storage.
