Hummus Broccoli Wraps

2 recipes lemon hummus
2 large heads broccoli
olive or canola oil
salt and pepper to taste
12 medium burrito wrappers

Make two recipes of the hummus. Peel broccoli stems, remove, and chop. Chop remaining broccoli into small pieces about 1/2 inch. Put oil into fry pan over medium heat until hot. Add broccoli, salt, and pepper. Cook broccoli until at least tender, but I like to go until some is brown. Remove broccoli from pan.

Spread a bit of the hummus on the wrapper and top with broccoli. Wrap like a burrito. These keep for 1 week in the refrigerator or indefinitely in the freezer.
