Okara Burgers

300 g okara
100 g wheat flour
1 egg
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 onion diced
2 cloves garlic
vegetable or olive oil

Sweat garlic and onion together in pan with a little oil until translucent. Remove from the heat and allow to cool. Beat egg. Place garlic, onion, egg, okara, flour, salt and pepper together into a bowl. (Now is the time that any other spices can be added as well. At various times I have used: cumin, chili, paprika, and/or cayenne for different flavors.) Mix thorough. Shape into 2 large or 3 smaller burgers. These will not shrink while cooking so what you make is what you get. Cook two burgers in the microwave on high for 5 minutes. (For moister burger skip this step and cook longer in the pan). Warm up a pan to medium. Place a thin layer of oil on the pan. Cook burgers for a few minutes on each side to brown.
