Italian Olive Oil Pasta

1 package dried pasta
1/4 cup extra virgin olive oil

Seasonings:
3 cloves minced garlic

Sauce:
1/3 cup pasta water or chicken stock
1 cup chopped parsley
1 teaspoon minced lemon zest
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper or crushed red pepper

Cook the pasta according to the instructions on the package and drain.

Place empty pasta pot over medium heat. When hot, add the oil and seasonings. Saut for a few seconds.

Add the ingredients for the sauce and bring to a low boil.

When the sauce has reached a boil, return the pasta and combine until evenly mixed.

Serving suggestions: sprinkle on 1/2 cup toasted pine nuts or walnuts, and 1/2 cup freshly grated Parmesan.
