Mackerel Olive Enchiladas

2 cans green olives
2 cans black olives
2 cans mackerel
1 cup sour cream
30 small, soft, flour burrito wrappers
16 oz mild salsa

Dice olives and combine with mackerel and sour cream. Use #20 disher to scoop one dollop of mix into a burrito wrapper. Fold and place into baking dish. Once dish is full of enchiladas spread salsa over the top.

Bake at 350F for 30 min
