Pork Burrito

1 cup raw ground pork
(1 cup cooked chicken, chopped)
(1/2 cup raw rock shrimp)
1/2 cup cooked black beans, drained
2 tablespoons cilantro, chopped
1/4 cup yellow onions, chopped
1/4 cup tomatoes, chopped
1/2 jalapeno, ribs & seeds removed, chopped fine
1 teaspoon cumin
1 teaspoon dark chile powder
juice of one lime
1 cup cheddar cheese, shredded
4 8" flour tortillas, warmed
1/2 cup Jack cheese, finely grated

Sauce:
1 garlic clove
2 tomatillos, medium size
other half of jalapeno
2 tablespoons cilantro,
1 cup water

Method:
On medium heat in a heavy saut pan, add ground pork and onions and cook for one minute. Drain. Add rock shrimp, cook for and additional two minutes. Add the rest of the ingredients except for cheese and cook for an additional three to four minutes.

Remove from heat. Let sit for one to two minutes. Add cheese and combine.

Divide in fourths and spread on warmed tortillas. Roll. Spoon tomatillo sauce over top. Sprinkle jack cheese over sauce.

Method for Tomatillo Sauce:
Puree all of the above, cook for 15 minutes over medium low heat. Spoonover top of burrito and sprinkle with jack cheese. Serves 4.
