Lentil-Sausage Casserole

Ingredients:
2 links hot Italian-style turkey sausage
1 tsp olive oil
I chopped onion
1 19-oz can lentil soup
2 cups individually quick frozen (IQF) spinach
1 tsp dried oregano
1/2 cup uncooked converted white rice
pepper to taste
1/2 cup grated extra sharp Cheddar cheese

Method:
1. Preheat oven to 400 degrees F.
2. Remove casings from sausage and crumble with a fork.
3. In a medium skillet, heat the olive oil over medium heat.
4. Add sausage and onion. Cook, stirring, until onion softens,
about 5 minutes.
5. Add lentil soup, spinach and oregano, and heat through.
6. Add rice. Season with pepper.
7. Transfer to a lightly oiled 2- 2 1/2-qt baking dish and cover
with foil.
8. Bake casserole for 35 minutes, or until rice is tender.
9. Top with cheese and bake uncovered for a few minutes to
melt cheese.
