Ginger Lemon Concentrate

4 oz ginger (roughly)
1/2 cup white sugar
1 cup lemon juice

Dissolve the sugar into the lemon juice. Use a stick mixer or warm the lemon juice or some combination of the two. Slice the ginger and add to the lemon sugar mixture. Use a stick blender to thoroughly break down the ginger. Use a large strainer to separate the syrup from the ginger pulp. Still using the strainer gather the pulp into a ball and squeeze more juice out of it.

Serve 1 tbsp of the ginger lemon concentrate with 6 oz chilled seltzer.
