Passionfruit Sorbet

1 cup sugar
1 cup water
2 1/2 cups passion fruit juice, pulp and seeds (about 3 pounds)
Juice of 1 lime
Pinch of salt
2 tablespoons rum or vodka, optional

Heat water, sugar, and salt together to dissolve. Add the rest of the ingredients. Puree if using fresh passionfruit. Chill in refigerator until cool Freeze according to your ice cream maker's instructions.
