No-Bake Chocolate Cheesecake

crust:
1 1/2 cups graham cracker crumbs (84 grams)
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, softened

12 oz semi-sweet chocolate chips
1 (8 oz.) pkg. + 1 (3 oz.) pkg. cream cheese (softened)
1/3 cup sugar
1/4 cup butter, softened
1 1/2 tsp. vanilla
1 cup heavy or whipping cream

1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch springform pan. Chill until firm.

2. Melt chocolate chips in top of double boiler over hot water, stirring until smooth. Combine cream cheese and sugar in large mixing bowl; add butter, beating until smooth. Blend in vanilla. Beat in melted chocolate all at once. Whip cream until stiff. Fold into chocolate mixture.

3. Spread mixture evenly across crust. Refrigerate for at least 2 hours.
