Fruitza - Dessert Fruit Pizza
1 lb pizza dough
1/2 stick butter, melted
15 oz. ricotta cheese
1/2 cup cream cheese
1/2 cup sugar
2 tsp. cinnamon
1/2 cup raisins
2 large baking apples (e.g. Roma or Granny Smith), unpeeled but cored and sliced about 9 slices)
1 banana, sliced
1-2 sliced kiwis
2 oz. chocolate chips
12 fresh strawberries, sliced and 1 whole strawberry
1/2 cup raspberry preserves
1 Tb. powdered sugar
Roll out the regular pound of dough onto your cornmealed paddle, and brush with melted butter. And let's mix in a bowl the ricotta, cream cheese, sugar, cinnamon and raisins. Don't like raisins? Leave them out. Put in what you want. Put maybe nine dollops of the mix, ordered like a tic tac toe game around the pizza and press a slice of apple over each one. Then spread the banana across the pizza around the outskirts of the apple/cheese rings. Now let's make sure that the pizza can move on the peel and bless it if it won't. Angle the peel back, jerk back towards you and bake 10-13 minutes at 500bF When bottom edges begin to warp then bring it out on a rack and let's start to give it some color 'cause it looks kinda bland now.
So butter the edge with your brush and how about spreading some kiwi around to start off Car's PIzza of Many Colors, Jackson? And how about some chocolate chips while it's still hot enough to melt them? The pizza will steam the fresh fruit a little too, though they and the chocolate would be spoiled under the intense heat of the oven and stone. So lay on the fresh sliced strawberries. Let's line the inside of the crust with raspberry preserves and put a small dollop in the holed center of each apple. A fresh strawberry in the middle, sprinkle powdered sugar as a final garnish and it's nirvana hot or cold.
