Candied Ginger Cookies

1 cup unsalted butter-softened
3/4 cup sugar
3/4 cup packed brown sugar
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated fresh ginger
2 eggs
1 teaspoon vanilla extract
2 3/4 cups flour
1/2 cup crystallized ginger nibs

Beat butter with mixer on medium speed for 30 seconds. Beat in 3/4 cup sugar, brown sugar, cream of tartar, baking soda, salt and ground ginger until combined. Beat in eggs and vanilla. Add flour and crystallized ginger. Cover and chill for 1 hour or until dough is easy to handle.
Preheat oven to 375 degrees. Shape dough in 1 1/4 inch balls. Roll in sugar. Place balls 3 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or till lightly browned. Cool on wire rack.
