Potato Waffles

3 potatoes shredded
Salt (about two tsp)
1/4 cup red onion shredded
1 egg
1/4 cup sour cream
1 tablespoon horseradish
Pepper

Grate potato and onion. Mix with salt. Place into a mesh bag or cheese cloth and let sit a few minutes.
Combine egg, sour cream, horseradish, and pepper.
Squeeze the moisture out of the potatoes.
Combine potatoes with egg mixture.

Oil waffle maker with canola or butter.
Spread about 1/4 of the mixture across the maker.
Press down firmly.

Cook about 12 minutes.
Serve with sour cream.
