Granola Bars
3 cups (300 g) quick-cooking oats
1 cup (100 g) flaked coconut
1 sunflower kernels (150 g), almonds, or other nuts
1 cup (170 g) miniature semisweet chocolate chips
1/2 cup (60 g) sweetened dried cranberries
1/2 cup (60 g) oat bran
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a large bowl, mix together the dry ingredients: oats, coconut, nuts, chocolate chips, cranberries, and bran. Add sweetened condensed milk, butter and mix with a spatula or your hands until well blended. Press flat into the prepared pan.
Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.
This recipe is infinitely customizable. The oats, coconut, butter, and milk are required for the structure of the bar so it is best to not mess with them too much. Almost any kind of nut can replace the sunflower kernels. The bran can be left out. The berries can be doubled or replaced with cherries or raisins. Spices such as cinnamon and nutmeg can be integrated as well.
