Garlic Cheese Breakfast Pasta

8 oz mozzarella cheese
3 eggs
1 lb linguine
4 cloves garlic (or more) diced
3 tbsp olive oil

Grate the cheese, whisk eggs, and combine.

Cook the pasta in salted water until al dente. and drain.
Stir the egg mixture into the pasta while the pasta is still warm and set aside.

Lightly cook the garlic in a medium cast iron or steel pan (something that can go into the oven) until garlic is just starting to brown. Add the pasta mixture and cook until it is just starting to brown on the bottom - about 4 minutes.

Move the pan under the broiler and broil until brown on top. This will take another 4 minutes or so. Remove from the oven, slice pizza-style, and serve.

Like an omelet there are so many possibilities for additions:

- a slosh or two of sriracha or other pepper sauce
- capers and/or lox
- chopped olives
- minced parsley
- bacon
