Slow Bread

3 cups all purpose flour
1/4 tsp yeast
1 teaspoon salt
1 1/2 cups water

Mix it together. Oil bottom of the pot and place mixture in pot. Cover and sit 12 hours at room temperature. Remove dough from pot. Shape. Let raise for an hour. Make sure bottom of pot is well oiled. Preheat oven and pot to 500. After oven and port are warm place dough into pot. Bake covered for 30 minutes, and uncovered for 15 minutes.

Note: You could also try parchment paper at the bottom of the pot to keep the dough from adhering to it.
