Sweet Baked Tomatoes
Baking brings out the natural sweetness in tomatoes. This dish is best at the end of the tomato season when your tomatoes are bursting with flavor.
Ingredients:
4 slices of bread
1/4 cup olive oil
4 tomatoes
slivers of fresh garlic
salt and fresh ground pepper
toasted breadcrumbs
small amount of butter
slivers of fresh basil
1. Preheat oven to 350 degrees
2. Cube 4 slices of bread into 1/2" cubes
3. Saute bread in 1/4 cup olive oil over medium heat
4. Toss and remove from heat when lightly toasted
5. Slice the tops off of 4 tomatoes and squeeze out the seeds
6. Fill the tomato cavity with slivers of fresh garlic
7. Season with salt and fresh ground pepper
8. Place a topping of toasted breadcrumbs on top, gently pressing into the cavity
9. Dot with a small amount of butter and slivers of fresh basil
10. Bake for 20 minutes
