Pressure cookers. You might remember them from your grandmother's kitchen. Noisy things with a rattly valve on top that came complete with legends of occasionally spreading the evening's meal in a festive mosaic over the ceiling. Your grandmother's pressure cooker has been relegated to the antique shop, but her reasons for using one haven't. Given the internal temperatures these things reach they produce really speedy cooking times making them a positive boon to people who are looking for ways to use less energy. Once my pot comes up to speed the biggest problem I have is keeping the burner low enough.

As you can see the designs have come a long way. My WMF is a breeze to use and clean. There are redundant safety systems so the odds of a mishap are comfortably close to zero. Even at full cruising speed the cooker makes less noise than a pot at a boil. I mostly use it for brown rice and beans and similar long cooking items. My very favorite recipe, however, was cribbed from Alton Brown's recipe for chili. I strongly recommend going for the three meat combo the first time you make this. The assortment of texture and flavor makes for a truly special dish.

Pressure Cooker Chili

3 pounds stew meat (beef, pork, and/or lamb)
2 teaspoons peanut oil
1 1/2 teaspoons kosher salt
1 (12-ounce) bottle of beer, preferably a medium ale
1 (16-ounce) container salsa
30 tortilla chips
2 chipotle peppers canned in adobo sauce, chopped
1 tablespoon adobo sauce (from the chipotle peppers in adobo)
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin

Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside.

Place pressure cooker pot over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in a clean large bowl. Once all of the meat is browned, add the beer to the pot to deglaze it.

Scrape the browned bits from the bottom of the pot. Add the meat back to the cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Follow the directions that came with the cooker and cook for 25 minutes.

This recipe calls for kosher salt. All of AB's recipes do. It's not a Jewish thing; it's a flavor thing. Kosher salt is pure NaCl. The other stuff has anti-caking agents and other things in it. Table salt will work as a substitute... at least until you get religion and switch to kosher salt for everything.

Now this recipe sounds good, the 30 tortilla chips is something I wouldn't think of putting in but they probably do add a nice subtle ground corn taste and thicken it up nicely. I'm a sucker for any dish with cumin ... I also like curry dishes a lot.
Almost makes me want to go out and buy a pressure cooker ...

Believe me, this recipe is heavenly. I haven't used our pressure cooker yet, although it's been in our extended pantry this whole cooking season. Sometimes equipment just shows up and I have to get a tutorial from Dave to figure out how to use it.

I think I might use it this weekend to make this dish, though....

Thickening is exactly it. The theory is that traditionally something like this would be thickened with masa harina. What else are corn chips other than masa in fried form? Plus chips are much easier to come by.
